Sambhar

**Sambhar Masala Recipe**

**Ingredients**
– 1 cup Toor Dal (Pigeon Peas), soaked and boiled
– 1 tbsp Oil
– 1 tsp Mustard Seeds
– ¼ tsp Fenugreek Seeds
– 1-2 Dried Red Chilies
– 8-10 Curry Leaves
– 1 Onion, chopped
– 1 Tomato, chopped
– 1 cup Mixed Vegetables (like drumstick, carrots, pumpkin, potatoes), diced
– 1 tbsp Tamarind Pulp
– 1 tsp Sambhar Masala
– ¼ tsp Turmeric Powder
– Salt, to taste
– Fresh Coriander Leaves, for garnish

**Instructions**
1. Heat oil in a pan. Add mustard seeds, fenugreek seeds, dried red chilies, and curry leaves. Let them splutter.
2. Add the chopped onion and sauté until translucent, then add tomatoes and cook until soft.
3. Add the mixed vegetables, sambhar masala, turmeric powder, and salt. Stir well and cook for 3-4 minutes.
4. Add the boiled toor dal and some water to adjust the consistency. Let it simmer until the vegetables are cooked.
5. Add tamarind pulp, mix, and cook for another 5 minutes.
6. Garnish with fresh coriander leaves and serve hot with rice or dosa.
