**Puri with Teekha Pani and Aloo Stuffing**
**Ingredients**
**For Puri:**
– 1 cup Rava (semolina)
– 2 tbsp Plain Flour
– 3 tbsp Oil
– ¼ cup Hot Water
– Oil (for frying)
**For Teekha Pani:**
– ¼ cup Mint leaves
– ½ cup Coriander leaves
– 1 inch Ginger
– 2 tsp Red Chilli Powder
– Small ball-sized Tamarind
– 1 tsp Paani Puri Masala
– 1 tsp Cumin Powder
– Pinch of Hing (Asafoetida) Powder
– ¾ tsp Salt
– 4 cups Cold Water
**For Aloo Stuffing:**
– 3 mashed Potatoes
– ½ chopped Onion
– 2 tbsp Coriander leaves
– ½ tsp Cumin Powder
– ½ tsp Chaat Masala
– ¼ tsp Black Pepper Powder
– ½ tsp Kashmiri Red Chilli Powder
– ½ tsp Salt
**Instructions**
**Making Puri:**
1. In a large bowl, combine rava and plain flour.
2. Add oil and mix well, ensuring that the rava is moistened.
3. Gradually add hot water and knead the dough.
4. Knead for 5-8 minutes until a smooth, soft dough forms. Add water as needed.
5. Cover the dough and let it rest for 20 minutes.
6. After resting, knead again for 2 minutes.
7. Pinch small, ball-sized portions from the dough.
**Preparing Teekha Pani:**
1. Blend mint, coriander, ginger, and tamarind into a paste.
2. In a large bowl, add this paste along with red chilli powder, paani puri masala, cumin powder, hing, and salt.
3. Mix well, then add 4 cups of cold water and stir until combined.
**Aloo Stuffing:**
1. In a mixing bowl, add mashed potatoes, chopped onions, coriander, and all the spices.
2. Mix thoroughly to combine.
