**Chhole Masala Recipe**
**Ingredients**
– 100 gms Kabuli Channa (chickpeas)
– 3 tbsp Oil
– 2 Onions, chopped
– 1 tsp Coriander Powder
– 1 tsp Chilli Powder
– 1 tbsp Chhole Masala
– 1 Tomato, chopped
– 3 Green Chillies, slit
– ½ inch Ginger, finely sliced
– Salt, to taste
– ½ tsp Chaat Masala (optional)
– ½ tsp Kasuri Methi (dried fenugreek leaves, optional)
**Instructions**
1. Soak the Kabuli Channa overnight. Cook until tender and keep aside.
2. In a pan, heat 3 tbsp oil and fry the chopped onions until golden brown.
3. Add coriander powder and chilli powder, stirring well.
4. Add Chhole Masala and fry for 3 minutes on low flame.
5. Add the chopped tomato, green chillies, and ginger. Cook until tomatoes soften.
6. Add the boiled channa and salt, then cook for 5 minutes.
7. For extra flavor, add chaat masala and Kasuri methi, if desired.
